Pineapple Torte



WHAT YOU'LL NEED

cake

7 eggs
7 tsp sugar
5 tsp flour (all-purpose flour)
10 tsp ground pecans
2 tsp baking powder

1 can Pineapple Tidbits – for the filling
1 tsp powdered sugar – for the top
8” round pan

egg cream

3 eggs
2 tsp corn starch
2 tsp all-purpose flour
1 1/3 cups sugar
2 1/4 cups milk
1 1/2 stick unsalted butter (room temperature - soften)


WHAT TO DO

To make the cake

1. Preheat oven to 395 F .
Combine 5 tsp of flour and 2 tsp of baking powder in the bowl.

2. Mix 7 egg whites with 7 tsp of sugar until stiff ( use a hand mixer )
– egg whites mixture

3. Beat egg yolks and 10 tsp of ground pecans with a hand mixer slightly.
Add 5 tsp of flour and 2 tsp of baking powder and stir carefully – egg yolks mixture

4. Mix egg yolks mixture & egg whites mixture with a rubber spatula gently.

5. Coat a baking pan evenly with a baking spray and bake in preheated oven (395 F)
in a 8” round pan for about 25 to 30 minutes until toothpick comes out clean.
Cool down.


To make the cream

1. Beat 3 eggs and 1 1/3 cups of sugar with a hand mixer until creamy. - egg mixture
Beat egg mixture and 2 tsp of corn starch and 2 tsp of flour. - cream mixture

2. Boil 2 1/4 cups of milk in a large pot and pour cream mixture.
Reduce heat and mix well until thickens.

3. Cool completely down, then mix in 1 1/2 stick of soften butter. Mix with a hand mixer until nice and creamy.


Decoration

1. Cut into two layers.

2. Brush cake bottom layer with juice from the pineapple can.

3. Spread about half the cream, then fruit, then cream again.

4. Cover the upper layer and sprinkle with powdered sugar on the top, put on pineapples.
